Q & A
with Darren Leite
President & Co-Founder
Arizona Culinary Institute

Q: What are the most attractive aspects of a culinary career?

A: The ability to work anywhere in a creative field that has great long term growth potential.

Q: What sector of the culinary industry has the most income potential?

A: The person matters much more than the sector. Their skills, education, etc. will make the difference.

Q: How important is nutrition knowledge as a culinary professional? Is this a basic component of a culinary education?

A: It's important and becoming more so every day. Our Nutrition Teacher is both a Registered Dietitian and a qualified Chef.

Q: What words of wisdom or advice would you give to recent or soon-to-be high school graduates who are interested in an institutional culinary or restaurant education? Would you recommend any academic or life prerequisites?

A: I would advise that they get some type of work experience, at any level, in some type of Hospitality Employment. Keep your eyes open and attitude flexible. It's a rich, rewarding career. They are many excellent Books and Magazines about the Industry and I'd recommend that they read and subscribe to some.
